Beep! Beep! It's almost time for BACK TO SCHOOL! Delight teachers, students, and school bus drivers with these adorable SCHOOL BUS cookies!

Cookie Yield

This is a medium cookie. For a single batch of dough, you can make about 18-20 of these cookies. I should note that I roll my cookies to 1/4" thick using the Dough EZ Rolling Mat System. The thickness of your cookies will impact your yield.

Prepping the Royal Icing

ICING PREP 

For a single batch of dough, I typically use a single batch of icing. Since I'm using a KitchenAid mixer, I made a double batch of icing and split it in half (reserving half for another project).

 

This cookie has 6 icing colors. I used Bright White, Sky Blue, Lemon Yellow, Super Red, and Diamond Black.  l don't measure exactly...I estimate. For a more detailed look at icing planning, CLICK HERE to read this helpful blog post.

If you're making a full batch of these cookies, here is a breakdown of the icing by ounce

2 oz Black Diamond (1 oz pipe and 1 oz flood)
10 oz Lemon Yellow (1 oz pipe and 9 oz flood)
1 oz Super Red (pipe only)
2 oz Gray (or pastel black diamond) (2 oz of 20-second icing)
1 oz Bright White (1 oz flood only)
4 oz Sky Blue (4 oz flood only)
