I had so much fun creating these cookies and I made them with the intention that could be paired up with a stenciled cookie for an awesome Valentine's gift!

Cookie Yield
For a single batch of dough, you can make about 18-20 of these cookies. Keep in mind, the Fancy Rectangle Cutter is large so that it will fit each of the 3 stencils in the kit. Also, I should note that I roll my cookies to 1/4" thick using the Dough EZ Rolling Mat System. The thickness of your cookies will impact your yield.

Prepping the Royal Icing
It's probably more like that you'll create these cookies in the sets and so I'll break up color guide by each color set.
ICING PREP
For a single batch of dough, I typically use a single batch of icing. Since I'm using a KitchenAid mixer, I made a double batch of icing and split it in half (reserving half for another project).
TACO ICING GUIDE
The Taco cookie set has 7 icing colors - using 6 gels (I used the golden yellow in both pastel and medium tone).
ICING PLAN BY THE OUNCE (THIS IS BASED ON MAKING 10 OF EACH OF THESE 2 COOKIE DESIGNS - 20 COOKIES)
Super Red - 2 oz (pipe and 20-second)
Leaf Green - 1 oz (pipe only)
Bright White - 6 oz (flood only)
Black Diamond- 2 oz (pipe and flood)
Golden Yellow (pastel) - 6 oz (pipe and flood)
Golden Yellow (medium tone) - 1 oz (pipe only)
Buckeye Brown - 1 oz (20-second only)
PIZZA ICING GUIDE
The Pizza cookie set has 7 icing colors - using 5 gels *Check out my note on color mixing to make the icing color for the mushrooms.
Super Red - 3 oz (pipe and 20-second)
Bright White - 7 oz (flood only)
Black Diamond- 1 oz (pipe only)
Ivory - 5 oz (pipe and flood)
Light Buckeye Brown - 3 oz (pipe and flood)
Mushrooms (light color - 1oz (20-second) **color mix alert** add 1/4 tsp of black and 1/4 tsp of brown to the 1 oz white icing.
Mushrooms (dark color - 1/2oz (20-second) **color mix alert** add 1/4 tsp of black and 1/4 tsp of brown to the 1/2 oz of white icing.
LATTE ICING GUIDE
The Taco cookie set has 4 icing colors - using 4 gels. If you're a beginner, this set would be a good place to start!
Deep Pink - 8 oz (pipe and flood)
Sky Blue - 4 oz (pipe and flood)
Bright White - 6 oz (flood only)
Black Diamond- 1 oz (pipe only)

ROYAL ICING RECIPE

Project Timeline
Plan ahead to enjoy the most success with your cookie project! I break up the decorating process. It works better with my life to do a little each day. Here is the schedule for this cookie project and estimated times on how long each phase takes.
DAY 1
Mix Dough (30 mins), Chill Dough (2 hours inactive time), Roll and Bake (1 hour), Mix Royal Icing and Prep Icing Colors - it is helpful to make the colors the day before you decorate because the color will deepen overnight (1 hour).
One day 1 I also make my royal icing transfers. This allows enough time for them to dry before use.
DAY 2
Outline and Flood Cookies (1-2 hours), Allow to dry in front of fan before adding details (1 hour for standard cookies or 6 hours before stenciling with royal icing - like the plaque cookies). Piping details and stenciling (1.5-2 hours)
**ALLOW COOKIES TO FULLY DRY 18-24 HOURS BEFORE PACKING. STORE IN A COOL OVEN OVER NIGHT.**
